Tex-Mex Tofu Burritos

Ingredients:

1 (10.5 oz) pack extra firm cubed tofu, drained

1 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. ground cinnamon

2 tsp. cider vinegar

3 Tbsp. water

1 cup sliced onion, separated into rings

1 cup (3×1/4″) juliene cut red bell pepper

1 cup (3×1/4″) juliene cut zucchini

1/2 cup each: corn, black beans & salsa

5 (8″) whole grain tortillas

5 Tbsp. sliced green onions

Instructions:

Place tofu in a shallow dish.  Sprinkle with cumin, chili powder, cinnamon and vinegar.  Toss gently to coat.

Heat water in a large skillet on medium heat.  Add onion; saute 2 minutes.  Add bell pepper and zucchini; saute 4 minutes.  Stir in marinated tofu and salsa mixture (corn, beans, salsa) and cook 2 minutes, stirring occasionally.  Remove from heat.

Warm tortillas.  Spoon ~1c. tofu mixture down center of tortilla.  Top evenly with green onion.

If you are lacking any of the above ingredients, try these alternatives: yellow/green/orange pepper, red onion, black eyed peas, pinto beans, chili beans, or soybeans (edemame), taco sauce, shredded cabbage or carrots.

Remember, the more color the better!

Elisa! I tried these for the first time and loved them! Who knew I liked tofu? Even my husband liked them. I have to admit I cheated a little and added some cheese, but they would have been just as good without it. Can’t wait to try more recipes. Thanks!

That’s great news Em! Thanks for giving them a try. They are one of Joe’s favorites :0) As long as you have the tofu and seasonings, you can really mix up the veggies to keep it interesting based on what you have available. Thanks for sharing your success!!
