Wow, this sounds like a fantastic service! I saw a post by you on Dr.Fuhrman’s website in the forum and was suprised to see a nutritionist who follows Dr. Fuhrman’s diet. I try to follow his nutitarian life style but fall off the wagon constantly. Does this help with motivation?

Hi Ginny,

Yes, I am a nutritarian dietitian and we are a rare breed! My services provide motivation, accountability, and education through daily emails among clients and myself. The one month, three month, and follow up packages all include unlimited emails. Most clients take advantage of this and find that sharing their daily food intake and receiving my feedback, coaching, and encouragement provides a valuable learning experience which fosters success.

Hi Elisa. I’m glad to have found you. I am a member of Dr.Fuhrman’s website, but I do like the idea of having individualized counseling from someone who’s been through it. I find his diet difficult, but I believe in it. I have an autoimmune disease also and definitely need help. Thanks for being here.

Judy,

It’s so nice to hear from you! I am glad you found me too. I’m sorry to hear that you have an autoimmune disease. Living with one myself, has enhanced my skills in helping others to deal with their struggles. Autoimmune diseases are actually becoming my focus area since I can relate with the individuals so well. Plus, we are some of the most receptive patients which is a real pleasure to work with. Please don’t hesitate to email me with any further questions at elisa@eaturveggies.com. I look forward to hearing more from you Judy!

Hi Elisa –
I am strongly considering purchasing your 1 month consulation package, but I wanted to at least say Hi first. I have had RA since I was 15 (I am almost 41), I very recently went vegan, but am not losing any weight despite working out 6 days per week. I recently read that my medication, Remicade, can cause weight gain and difficulty losing weight, so I stopped it and have not had an infusion in almost 10 weeks. I wondered how long you have been doing this? ( I didn’t catch that on your site, but maybe you mentioned it), and also if I would need blood work done while working with you? I am switching to a new rhuematologist and my first appointment would be Feb. 22nd. How backed up are you? Thank you so much!

Hello Christie!

Thanks for saying hi :-) I’m sorry to hear that you have been dealing with RA for almost 26 years, that can’t be easy. I’m really pleased that you were recently able to get off your Remicade, switch to a vegan diet, and continue to exercise 6 days a week! That’s fantastic!! Of course, being vegan alone, won’t necessarily guarantee weight loss and health improvements. You must consume the proper foods and nutrients as well.

I would love the opportunity to work with you! I’ve been living this way for a good 2+ years now and continue to learn, grow and improve all the time. My clients, especially those that listen to me, are doing really well and it’s been incredibly rewarding to facilitate their progress.

Depending if/when you decide to sign up for the one month package, we could get you started in the next 2 weeks. Once I receive payment, I’ll email you with instructions to complete the 1) Client Contact Info and 2) Client Pre-assessment forms, under the ‘Forms’ tab. Once each of those are submitted online individually, you’ll get an email with a potential starting date.

Any lab work would be wonderful in establishing a baseline. I would be particularly interested in seeing your Vitamin D, B12, iron, zinc, sed rate and any other pertinent RA labs that may tend to be elevated.

Let me know if you have any other questions and I will look forward to hearing from you!

Hi Christie-
This may be a bit forward, but I LOVE ELISA!!! I am/was having SERIOUS medical issues and had ballooned up to over 280lbs.(I’m 36, so weight management isn’t what it used to be) I worked for one month with Elisa and not only LOST WEIGHT (13lbs in one month- the healthy way) I feel so good- better than I have in 3years! I was experiencing the same issue of my weight not budging and one of the most helpful parts of Elisa’s service is that you can address these issues with her daily and receive a daily pep talk- unlimited email really means unlimited email. But after following her recommendations, i began to see weight disappearing. Some things are so very hard- eating out with friends, kale kale and more kale, and no salt or butter- but it gets easier and with the help of a ‘diet-lifestyle coach’ you can’t believe the difference it makes. I don’t want this to sound like a sales pitch but I truly did benefit from this service. You learn a lot about the chemistry of food and its interaction with your body and about yourself. And believe it or not, you really learn to love kale.

Elisa,
I’m a plant-based dietitian, too! I was so happy to find your website; it’s always nice to find other nutrition professionals that believe and practice this wonderful way of living. Makes me feel like less of a misfit! I hope you don’t mind I have started directing many of my clients to your website for additional recipes & information. Love the smoothies :)

Oh sweeet… you’re a plant-based RD too!! I also enjoy connecting with like minded peers, it can be a lonely world for us ;-) I’m curious where you’re based? I was thrilled to read that you’re sharing my site with your clients, THANK YOU! I’m glad you introduced yourself, and whatever you do, don’t be a stranger Kelsey!

I am based in rural western Kentucky, but am originally from northwest America (Alaska, Washington mainly). There is an interesting food dynamic here because although the preferred eating style is SAD, there is so much delicious fresh produce & growing your own garden is so easy in this climate! My first step with my clients is beginning to learn how to prepare/enjoy more fruits & vegetables. Your website helps a lot in this. I also really like http://www.sinlesslydelicious.com. Currently I work in a hospital with certain days at the clinic for outpatients. The hospital is a very powerful motivator because probably 95% of the people in there could have avoided their failing health by changing their diet and lifestyle! I love my job, but there is only so much plant-based teaching I can do within the system. My dream is to be in private practice or partnered with like-minded practitioners and get some real healing going on!!

Hey Kelsey,

I actually spent 2 years of my college experience at U of L, so I’ve seen some of Kentucky and it was beautiful ;-) Never been to Alaska or WA though! I’ll keep the food prep topic in mind when preparing blogs, esp. since I know it’s helpful for clients. I’m familiar with the clinical scene, since I worked in 3 different hospitals prior to consulting. I’ve also experienced the limitations of plant-based teaching in that setting, which is one of the many reasons why I started my own gig. I admire your gumption to do what you can to spread the knowledge. In the meantime, keep dreamin and stay in touch! ~Elisa

Hi I just so happen to come across your website and found it very interesting and helpful, but I wanted to know if there was a way to subscribe to it for free? I don’t see an option on your page.

Thanks for letting me know Karina. A recent upgrade seems to have changed this function on my site. I’m working to restore it now. Once it’s up and running you’ll see a place (in the right hand corner of any page) to enter your email for tips, recipes and updates in the future ;-)

Hi Elisa-
First off, I’d like to thank you for your work and your website. I just found it this morning and subscribed to the newsletter right away. I am new on my journey to “eat more veggies” but am very determined to improve my health. I am a 27 year old female and have had many seemingly random health issues (nothing too serious, just more irritating and frustrating) that I am determined to do my best to remedy through diet and exercise as opposed to traditional medications. I am definitely considering using your services, but am still just getting started with my research! My question for you is, obviously identifying vitamin and mineral deficiencies is pivotal in treating disease holistically. How do I go about doing that? What labs are absolutely essential in getting started?

Elisa Rodriguez, RD, LDN October 28, 2011 at 10:57 am

Hi Lacey! Thank you for your kind words. You are very wise to begin your health journey now, it will only enrich your life later. I too had pesky symptoms that grew into irritations and eventually serious health issues. Best to prevent that from happening to yourself.

I’m not currently taking on new clients, but very soon I will have the perfect package for someone like yourself making the transition with minimal health issues. You’ll learn more about this in my newsletter, VEGeNews – thanks for signing up!

In the meantime, work on transitioning to a whole food plant-based (WFPB) diet with less than 5% animal consumption. Once you do this, you’ll want to monitor your B12, vitamin D, calcium, iron, zinc and iodine levels every 6-12 months at your annual check up.

Until then, it’s wise to know your vitamin D, cholesterol and triglyceride levels so you can note their improvements upon implementing my recommendations – that’s the fun part. ;-)

Wishing the best as you begin this wonderful new chapter in life!

Hello Elisa, I’m new to your page and want to do a plant based diet. However, I’ve been struggling with Acid Reflux/Heartburn for months and m on PPI’s. Are you doing diet consultations? I’d really love to hear if you have any information that could help me. I’ve been running into a brick wall left and right. Thanks!

Elisa Rodriguez, RD, LDN January 26, 2012 at 7:14 am

Hi Ron! Welcome and thanks for visiting!! I’ve worked with a number of people to resolve their reflux and heartburn and even to get off the PPI’s. This is all feasible by properly transitioning you to a plant-based diet, but it’s not an overnight fix. It takes some time to make the transition, but as I guide you to do so, you’ll see results across the board. You can consult with me via Tipmeet Talk or my GLOW consultation program (which might be better since it’s much more hands on in isolating and resolving your problem swiftly). Take a look and let me know your thoughts…
