Weekly Recipe: Tex-Mex Tofu Burritos

These burritos are a great way to use summer vegetables such as squash and corn.  The recipe doesn’t take long to throw together, and it makes a fair amount.  Double the recipe for a group of 10, or for extra later!  These leftovers are especially good because the marinade sets in, enhancing the flavors.  Feel free to get creative with the ingredients – just keep it colorful!
