Black Bean Mango Salad

Who doesn’t want the summer season to linger on?  This salad is a good way to keep tropical flavors alive throughout the year.  It is a refreshing, vibrant, flavorful dish well suited for most events.   I didn’t have a mango on hand, but since it is peach season – that worked just fine.  Other ingredients can be improvised as well such as the variety of onion.  You can also add cherry tomatoes, various colors of sweet bell peppers, or soybeans.  If you wish to make it a bit heartier to serve as the main fare, add some diced avocado and stir in gently.  The various textures and seasonings are delicious and healthy.  It’s so good it’s like a party in your mouth!
