Black Bean Mango Salad

Ingredients:

1 mango, peeled, pitted and cubed
2 tablespoons fresh chopped cilantro
4 green onions, thinly sliced
1 red pepper, chopped
1/2 cup frozen corn, defrosted (or fresh corn off the cob)
2 cups cooked black beans or 2 (15 ounce) cans low sodium black beans,drained
3 tablespoons fresh lime juice
1 teaspoon dried oregano (or 1 Tbsp. fresh)
1 teaspoon minced fresh garlic
1 teaspoon ground cumin
1 dash of chili powder
4 cups chopped romaine lettuce leaves

Instructions:

Mix all the ingredients, except the lettuce.

Allow salad to stand at least 15 minutes before serving.

Serve on a bed of chopped green lettuce.

This can be made a day ahead and kept refrigerated, but add the mango and another splash of lime juice before serving.
