Basic White Sauce

Ingredients:

1 cup raw cashews, soaked 15 minutes (or 8 oz. tofu)
1 1/2 onion diced and sweated (on the stovetop)
4 garlic cloves
2 cups unflavored almond or organic soymilk
3 Tbsp. Nutritional Yeast
1 tsp. white miso
Pepper to taste
Fresh herbs: Thyme, rosemary, sage, parsley to finish
Instructions:
Saute onions and garlic with just enough water to cover the pan.
Steam fry until onions are translucent.
Add to blender with soaked cashews, soy/nut milk and rest of ingredients.
Blend, adjusting thickness to desired consistency.
Add fresh herbs to finish.
This sauce will reduce and continue to thicken with time.
